In the Kitchen

It’s been a bit quiet in the Gigibird kitchen of late….it isn’t because I haven’t been cooking and baking but somehow I just haven’t got round to taking the obligatory photos….I will be baking next week when I have all the ingredients in place but for now here is yesterdays apple pie and a rare glimpse of a tidy corner.

I usually resist my husbands plea to make an apple pie, or any pie come to that because I have a bit of a mental block with pastry….it’s not because I can’t make it, I can but I view it as very unhealthy opposed to a crumble which we all know is overflowing with healthy benefits!

This is a one crust pie which can't really go wrong - however rough and ready it looks before it goes into the oven it comes out greatly improved.
My only advice about fruit pie making is, is to sprinkle the bottom with an absorbent substance - semolina, ground almonds, or in this case ground rice.

Almost forgot - a clear stretch of kitchen

O'h my god no way, my oldest bestest ever friend's first love, is the spit, known to a few as "Mucas Motors", a grease monkey no less he is so contrary, i digress, he is no less, a cross between Julian Sands, Sean Bean and Axel Rose, i feel quite woozy and feel the need for a lie down, who'd have thought good old Marcus (i say black, he say's white) would be in such infamous company, do you mean (Mr Oldman) no booze or no sex, is he on the wagon or cel-i-bat! not sure what "pledge" you are refering to, i asume you do not mean furniture polish!!! S X

  4. well it's a nice feeling to be back in the gigibird kitchen...reassuring to know you're baking pies which look so scrumptious. i love how you bake it without a dish like that! it's probably the perfect time of year for an apple pie right now. crumble too. i like mine with cold custard. yum! x

  5. That looks delicious - our outhouse is full of windfall apples given to us for our pig.
    I used to make a strawberry pie from a Simon Hopkinson recipe that was the same style - but I lost the newspaper clipping and it isn't in any of his books.

  7. Sorry, but the other commenters are all wrong.

    CREAM!! You need cream with it. Preferably lashings of runny single AND clotted.

    thump thump, thump thump, thump thump ..... don't worry about that thumping - that's just the sound of my arteries clogging up.

  8. Actually my husband chose to smother his pie with evaporated milk - ( don't say anything)and because I like to suffer I had that Swedish stuff which is dairy free.

  12. It was decided that the mystery object was probably a 1970's decanter!
    I think (apart from a spot of spam) you are my first male commentor:)
    Sadly there are no photos of the pie after it had been cooked - never got a chance!

  13. Because I like to suffer more, I ate a bit of that pie, but didn't get there in time for 'hot out of the oven,' so I had mine cold with no cream and shared the blackberries with Harry. I'm not complaining but there it is.....

  15. You must be in delicious, crunchy, crispy, juicy apple season! I love a good apple, although now I've got braces on my teeth I have to cut the apples up, which takes away some of the crunchy joy. Now that is a very inspiring apple pie. No flashy trims and perfect little edging. Now I am back from holiday the pies are on hold for a while thanks to exuberant gluttony!

  17. I tried it, you are right( clever clogs)... it is so scrummy well tasty and it looks quirky and rustic especially with clotted cream and cinnamon sprinkles...in fact I don't know a quicker way of putting 2lbs on......mmm

    Oh yes I am going to make my next apple pie like that, it looks scrummy, great tip to about the semolina or ground rice no more soggy bases.
